Cucumber Tomato Summer Salad (& it’s health benefits…)

Ok – as promised, one more delicious nutritious summer salad recipe! 
Even though the kiddos are back in school, and football season is about to begin,
the weather still requires cool, refreshing meals – especially ones that are SIMPLE.
This will not disappoint! 
With no further ado, I give you:
Cucumber & Tomato Summer Salad with Fresh Herbs
  • 2 or 3 good sized cucumbers, peeled and chopped. No matter the variety. They are all delicious. We grew ours at home, but if you had a choice in buying, mabye I’d go with Persian Cucumbers? They are especially crisp and juicy.
  • 3 or 4 Spring Onions, chopped. I like to use the whole thing even the greens.
  • 3 or 4 good size Tomatoes chopped. Any kind will do. Again, we grew ours at home, so I used a collection of smaller varying varieties, and if you are buying, maybe do the same? some beefy, some sweet, some green zebras, some heirloom – for fun and color.
  • 2 or 3 Radishes, chopped.
  • a bunch of Mint, chopped.
  • a bunch of Basil, chopped.
  • one Jalapeno or Serrano Pepper, seeded and minced.
  • Apple Cider Vinegar (preferably Bragg’s) about a 1/2 C?
  • Sea or Himalayan Salt & fresh ground Pepper to taste.
  • Toss in a large bowl, serve chilled

It’s so easy, I feel like I’ve forgotten something…!
